Raspberry White Hot Chocolate | vegan, refined sugar free

Hello my beautiful friends,

and a warm welcome from me! I hope all of you are doing really really well and that you've had a wonderful weekend so far. Sadly I have caught a cold over the past days and am now stuck in my bed drinking endless amounts of tea and watching Netflix (no complaints there), but it gets a bit boring after a while, so I came up with a recipe perfect for Valentine's Day. So if you'd like to know what I made then grab yourself a cuppa, get cosy and keep on reading!

Now, usually, I'm not really one for celebrating Valentine's Day because I think it's a bit gimmicky and over the top. Personally, I also reckon you should show your loved ones that you love them all year round and not just on one specific day where everyone just feels the need to do so because of some historical day. Anyways, I am here today to show you, beautiful people, how to make a perfect raspberry white hot chocolate which is vegan, of course, refined sugar-free and full of good ingredients for you!

What you'll need:

1 Cup Coconut Milk

½ Cup Frozen Raspberries

1 Tbsp Cacao Butter

3 Tbsp Maple Syrup

1 tsp Vanilla Extract or Grated Vanilla Bean

You'll need to do:

Defrost your raspberries, then put them into a blender and blend until slightly smooth but still remaining some of the seeds.
Heat your coconut milk over a medium heat in a medium-sized saucepan.
Pop in the cacao butter and start slowly stirring it into the milk until completely melted.
Add your raspberries, maple syrup and vanilla extract into the milk and stir until everything is combined nicely.
Pour into a large mug or into two small cups and enjoy!

Whether you're celebrating with your boyfriend, girlfriend, husband or you're simply enjoying your own company at home with a good movie, this is a perfect healthy-ish treat. You can enjoy it as it is or serve it with some traditional English tea cake, some fresh fruits or a good old Sundae (personally, I'd go with the sundae... just sayin'). It is super easy to make and requires only little ingredients which you can find at your local supermarket. I love the combination of the sweet maple syrup and cacao butter and the sourness of the raspberries, there's something about it that makes me crave more and more with each sip!

And that's it for today's post, my friends, I hope you enjoyed it and let me know if you recreate it by sending me a photo of it, I'd love to see them! Also, make sure you share this post over on your social medias with your friends and don't forget to follow my blog so you will never miss a post of mine!
