Pumpkin Spice Maple Granola | vegan - sugar-free - gluten-free

Hello you beautiful people out there,

I hope everyone's doing nothing but fantastic! We're well into Autumn by now if not even going to the end already *sniffling*, but the weather has significantly dropped in temperature and the fog is so thick in the morning, that it's hard seeing your own hand in front of you.

So what does this weather call for, you're asking? The answer is comfort food. All things warm and cosy are perfect for this cold time of the year, one of my favourites being freshly baked warm granola. And what represents Autumn better than Pumpkin and Pumpkin Spice? That's why I'm here showing you my very own creation of a Pumpkin Spice Maple Granola which is super healthy, vegan, of course, refined sugar-free and gluten-free for my friends out there! The best thing about it? It's super simple to do and requires ingredients you probably already have sitting in your cupboards. So grab yourself a cuppa, get comfy and keep on reading to find out how to make this deliciousness!

Ingredients:

3/4 Cup Pumpkin Puree*

4 Cups Oats

1/2 Cup Maple Syrup

1/4 Cup Coconut Oil Melted 

1½ Tbsp Cinnamon

1 tsp Ground Nutmeg

1 tsp Ground Ginger

1tsp All Spice

1/4 Cup Salted Peanuts

1/4 Cup Pumpkin Seeds


What You'll Need To Do:


Preheat your oven to 220° Celsius.

Add your Pumpkin Puree, Maple Syrup and melted Coconut Oil in a medium-sized mixing bowl.

Mix until combined completely.

In a separate large-sized mixing bowl add your oats and spices and combine.

Add your wet ingredients to the dry and mix very carefully, making sure to cover every bit with the liquids. 

Stir in the salted peanuts.

On a lined baking tray spread your mixture out evenly.

Bake for approximately 25-30 minutes stirring every 10 or so minutes to make sure it all bakes evenly.

Halfway through baking add in the pumpkin seeds. 

Enjoy some warm or let cool completely and store in an airtight container/mason jar for up to one month.

*Note: If you're able to get hold of a can of pumpkin puree make sure it's pure pumpkin and not pumpkin pie filling. However in many countries, these things aren't sold, so you can easily make your own, let me know if you want a post on that!





Pretty easy, am I right? Despite it being so simple to make it still tastes absolutely amazing thanks to its beautifully combined spices it makes it taste like Autumn in your mouth. Who can resist that? 

The ways to enjoy granola are endless, with some dairy-free yoghurt and some fruit, on top of some de-frosted berries as a replacement of the crumble layer or just simply on its own - it's delicious with all of the above.
